Description
Farmhouse Cheddar Blue is a stirred curd cheddar made with local unhomogenised milk and finished with a twist. Penicillium roqueforti is added during make, giving the cheese a gentle blue character that settles into the body of the cheddar. It’s firm and creamy, with savoury depth, a clean finish, and plenty of tyrosine crystals for a satisfying crunch. The blue notes don’t overpower the cheddar’s natural richness. Instead they sit alongside it and bring a pleasant tang.
