This is Parmigiano Reggiano, commonly known as Parmesan. Crafted from cow’s milk, our Parmesan is aged for a minimum of two years to develop its distinctive flavour. Currently, we have three cheeses in the maturation process: one was made on March 4, 2024, and will be ready by June 22, 2026; another, produced on April 2, 2024, is set to be opened on April 30, 2026; and the final one, made on March 3, 2024, will be ready by March 22, 2026.

Introducing my renowned Farmhouse Cheddar Blue, a traditional stirred-curd cheddar crafted in a classic farmhouse style. Inoculated with Penicillium Roqueforti mould, this cheese develops a rich, tangy blue flavour. Made on January 26, 2025, it will be perfectly matured and ready to enjoy on January 26, 2026.

Port Salut is a washed rind, semi-soft cheese known for its creamy texture and a delightful sweet-savoury flavour that intensifies with age. A versatile melting cheese, it’s perfect for grilled sandwiches, fondue, or grated over pizza. Crafted on June 1, 2024, it will be ready to enjoy by June 1, 2025.

Introducing my renowned Double Cream Chilli Brie – a unique twist on the classic Brie with a hint of spice! Don’t worry, the rich creaminess of the cheese balances the heat, leaving you with a subtle, enjoyable warmth that’s perfectly complemented by its smooth texture. This cheese was crafted on February 28th, 2025, and will reach its ideal maturity by April 11th, 2025.

This is an Orange and Walnut-infused Caerphilly, a firm, crumbly cheese with a mild, slightly lemony flavour. Infused with orange zest, triple sec, and lightly roasted walnuts, this experimental creation offers a unique twist on a classic. It will be ready to enjoy on April 22, 2025.
